Channel Your Italian Side and Make Chicken Cacciatore

I have absolutely no idea if this is actually Italian, or not. Most of the Italian food we eat in this country is actually those foods that were adopted by early Italian immigrants with what was available in America. That being said, this is completely delicious and, I just now noticed, also Paleo. Nothing like sneaking in an extremely healthy, whole food meal while almost making it taste incredibly indulgent. This will take about one hour to put together, and you can just let it simmer away on the stove all afternoon. Sounds like a good project for this Sunday!

Ingredients:

  • 2 Pounds Bone – In, Skin – On, Chicken (I like breasts and thighs for this)
  • 1 Large Onion, chopped
  • 2 Large Bell Peppers, chopped
  • 3 Stalks Celery, chopped
  • 2 Cloves Garlic, sliced very thin
  • 8 oz. Mushrooms, sliced
  • 2 Tablespoons Tomato Paste
  • 1 Cup Chicken Stock
  • 1 14 oz. Can Tomato Sauce
  • 3 Cups Diced Tomatoes
  • 1 T Dry Thyme, Basil, and Oregano (or use an Italian blend – but honestly the blends are never as good)
  • 1/2 T Dry Rosemary
  • 1 tsp. Red Pepper Flake
  • Salt and Pepper to taste
  • 2 Tablespoons Olive Oil
  • 3 Sprigs Fresh Thyme

Steps: 

  1. Over medium high heat in a large Dutch oven, heat the olive oil. Meanwhile, season the chicken liberally with salt and pepper.
  2. Brown the chicken on both sides until golden brown and delicious.
  3. While the chicken is browning, chop all of the vegetables except the garlic. After the chicken is browned, remove it from the pot, and add all the vegetables.

  4. Brown the vegetables with all of the spices, except for the fresh thyme, until the onion is completely translucent, and everything has developed a little bit of color. Then, put the chicken back into the pot and pour in all the tomatoes, and the stock.
  5. Allow the mixture to come to a boil, then reduce to a simmer and drop in the fresh thyme. Cover the pot, and allow to cook for as long as you possibly can. The longer the better.

You can serve this on its own like a stew, or you can serve over rice or pasta. I’m partial to rice because I just cannot like pasta, no matter how many times I try.
